STUFFED FLANK STEAK ROLL UPS

❗Ingredients:
• 1 ½ pounds flank steak, butterflied and pounded to an even thickness
• 2 cups fresh spinach, chopped
• 1 cup mozzarella cheese, shredded
• ½ cup breadcrumbs
• ¼ cup grated Parmesan cheese
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 1 tablespoon fresh parsley, chopped
• 1 teaspoon dried oregano
• Salt and black pepper to taste
• Butcher’s twine
❗Directions:
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ In a mixing bowl, combine spinach, mozzarella cheese, breadcrumbs, Parmesan cheese, garlic, olive oil, parsley, oregano, salt, and black pepper. Mix until well combined.
3️⃣ Lay the flank steak flat on a cutting board and season with salt and pepper. Spread the spinach mixture evenly over the steak, leaving a small border around the edges.
4️⃣ Roll the steak tightly, starting from one long side, and secure it with butcher’s twine at 1-2 inch intervals.
5️⃣ Heat a skillet over medium-high heat and sear the steak roll on all sides until browned, about 2-3 minutes per side.
6️⃣ Transfer the skillet to the oven and bake for 20-25 minutes, or until the steak reaches your desired level of doneness (medium-rare at 135°F/57°C).
7️⃣ Let the steak rest for 5 minutes before slicing into 1-inch thick pieces.
