STUFFED FLANK STEAK ROLL UPS

❗Ingredients:

•⁠ ⁠1 ½ pounds flank steak, butterflied and pounded to an even thickness
•⁠ ⁠2 cups fresh spinach, chopped
•⁠ ⁠1 cup mozzarella cheese, shredded
•⁠ ⁠½ cup breadcrumbs
•⁠ ⁠¼ cup grated Parmesan cheese
•⁠ ⁠2 cloves garlic, minced
•⁠ ⁠2 tablespoons olive oil
•⁠ ⁠1 tablespoon fresh parsley, chopped
•⁠ ⁠1 teaspoon dried oregano
•⁠ ⁠Salt and black pepper to taste
•⁠ ⁠Butcher’s twine

❗Directions:

1️⃣⁠ ⁠Preheat your oven to 375°F (190°C).

2️⃣⁠ ⁠In a mixing bowl, combine spinach, mozzarella cheese, breadcrumbs, Parmesan cheese, garlic, olive oil, parsley, oregano, salt, and black pepper. Mix until well combined.

3️⃣⁠ ⁠Lay the flank steak flat on a cutting board and season with salt and pepper. Spread the spinach mixture evenly over the steak, leaving a small border around the edges.

4️⃣⁠ ⁠Roll the steak tightly, starting from one long side, and secure it with butcher’s twine at 1-2 inch intervals.

5️⃣⁠ ⁠Heat a skillet over medium-high heat and sear the steak roll on all sides until browned, about 2-3 minutes per side.
6️⃣⁠ ⁠Transfer the skillet to the oven and bake for 20-25 minutes, or until the steak reaches your desired level of doneness (medium-rare at 135°F/57°C).

7️⃣⁠ ⁠Let the steak rest for 5 minutes before slicing into 1-inch thick pieces.
