Strawberry Cheesecake with a Graham Cracker Crust

Ingredients
For the Crust:
2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 tsp vanilla extract
For the Strawberry Topping:
2 cups fresh or frozen strawberries, diced
1/2 cup granulated sugar
1 tbsp cornstarch
2 tbsp water
1 tsp lemon juice
For the Drizzle:
1/2 cup powdered sugar
2–3 tbsp milk (for white icing)
2 tbsp strawberry sauce (from the topping)
Directions
Make the Crust:
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand.
Press the mixture firmly into the bottom of the springform pan. Bake for 8–10 minutes, then let cool.
Prepare the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
Pour the filling over the cooled crust and smooth the top.
Bake for 45–50 minutes, or until the center is slightly jiggly but set.
Turn off the oven, crack the door slightly, and let the cheesecake cool inside for 1 hour. Refrigerate for at least 4 hours or overnight.
Make the Strawberry Topping:
In a medium saucepan, combine strawberries, sugar, cornstarch, water, and lemon juice.
Cook over medium heat, stirring frequently, until the mixture thickens and the strawberries break down (about 10 minutes).
Remove from heat and let cool completely. Reserve 2 tablespoons for the red drizzle.
Make the Drizzles:
For the white icing, whisk together powdered sugar and milk until smooth.
For the red drizzle, mix the reserved strawberry sauce with a bit of powdered sugar for a slightly thicker consistency.
Assemble the Cheesecake:
Spread the strawberry topping generously over the chilled cheesecake.
