Seafood Bisque with Crab, Shrimp, and Lobster

Protein: ~28g per serving | Serves: 4–6 | Ready in: ~45 min
Ingredients:
Base:
• 2 tbsp butter
• 1 tbsp olive oil
• ½ cup onion, finely chopped
• ½ cup celery, finely chopped
• ½ cup carrots, finely chopped
• 3 cloves garlic, minced
• 2 tbsp tomato paste
• ¼ cup all-purpose flour
• ½ cup dry white wine (optional)
• 3 cups seafood or fish stock (or chicken stock)
• ½ tsp paprika
• ¼ tsp cayenne pepper (optional)
• 1 bay leaf
• ½ cup heavy cream
• Salt & pepper to taste
Seafood:
• ½ cup cooked lobster meat, chopped
• ½ cup lump crab meat
• ½ cup small cooked shrimp (chopped if large)
Garnish:
• Fresh parsley or chives
• Drizzle of cream or swirl of paprika butter
Instructions:
1️⃣ Sauté Aromatics:
Heat butter and oil in a large pot. Add onion, celery, carrots, and garlic. Cook for 6–8 minutes until soft.
2️⃣ Add Tomato Paste & Flour:
Stir in tomato paste, cook 2 min. Sprinkle in flour, stir well, and cook 1 min to remove raw taste.
3️⃣ Deglaze & Simmer:
Pour in wine (if using), then slowly whisk in stock. Add paprika, cayenne, bay leaf. Simmer 15–20 min.
4️⃣ Blend Smooth:
Remove bay leaf. Use immersion blender or blend in batches until smooth. Return to pot.
5️⃣ Add Cream & Seafood:
Stir in cream. Add lobster, crab, shrimp. Simmer 5–7 min until heated through. Season with salt & pepper.
6️⃣ Serve Hot:
Garnish with fresh herbs, a swirl of cream, or extra seafood on top. Serve with crusty bread.
