Rustic Italian Sausage with Peppers and Onions over Garlic Mashed Potatoes

Ingredients:
For the Sausage and Peppers:

4 Italian sausages (sweet or spicy, based on preference)
2 bell peppers, thinly sliced (use a mix of colors for a vibrant dish)
1 large onion, thinly sliced
2 cloves garlic, minced
1 tbsp olive oil
1/2 cup chicken broth (or white wine for a more robust flavor)
1 tbsp balsamic vinegar (optional, for a touch of sweetness and acidity)
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional, for heat)
Salt and pepper, to taste
For the Garlic Mashed Potatoes:

4 large russet potatoes, peeled and cut into chunks
4 tbsp butter
3/4 cup milk (or more if needed)
3 cloves garlic, minced
Salt and pepper, to taste
Chopped fresh parsley (for garnish)
Instructions:
1. Prepare the Garlic Mashed Potatoes:

In a large pot, add the potatoes and cover with cold water. Bring to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until tender when pierced with a fork.
While the potatoes are boiling, melt 2 tablespoons of butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 1-2 minutes, just until fragrant. Be careful not to burn the garlic.
Once the potatoes are cooked, drain them and return them to the pot. Add the butter-garlic mixture, remaining butter, and milk. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.
2. Cook the Sausage and Peppers:

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausages and cook, turning occasionally, until browned on all sides and cooked through (about 8-10 minutes). Remove the sausages from the skillet and set aside to rest.
In the same skillet, add the sliced bell peppers, onion, and minced garlic. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are softened and beginning to caramelize.
Add the chicken broth (or white wine) to the pan, scraping up any browned bits from the bottom of the skillet. Stir in the oregano, crushed red pepper flakes, and balsamic vinegar (if using). Let the mixture simmer for another 3-5 minutes to reduce slightly and develop the flavors.
Slice the cooked sausages into 1-inch slices and add them back into the skillet, mixing everything together. Let it cook for another 2-3 minutes so the sausages can absorb some of the flavors from the peppers and onions.
3. Assemble the Dish:

Serve a generous scoop of the creamy garlic mashed potatoes on each plate.
Spoon the sausage, peppers, and onions mixture over the mashed potatoes. Garnish with fresh chopped parsley for a pop of color and freshness.
