Grilled Chicken Bowl with Roasted Potatoes and Creamy Ricotta 🍗🥔🍅

Juicy grilled chicken served over golden roasted potatoes, fresh tomatoes, and dollops of creamy ricotta—simple, rustic, and deeply satisfying.

Ingredients (serves 2):

For the Chicken:
• 2 boneless chicken breasts or thighs
• 1 tbsp olive oil
• 1 garlic clove (minced)
• 1 tsp dried oregano or Italian herbs
• Salt & pepper to taste
• Juice of ½ lemon

For the Bowl:
• 2 cups baby potatoes (halved)
• 1 tbsp olive oil
• Salt, pepper, paprika
• ½ cup cherry tomatoes (halved)
• ½ cup ricotta cheese
• Optional: fresh basil or arugula for garnish

Instructions:
1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, pepper, and paprika. Roast 25–30 min until golden and tender.
2. Season chicken with olive oil, garlic, herbs, lemon, salt & pepper. Grill 4–5 min per side until cooked through. Let rest and slice.
3. Assemble bowls: layer roasted potatoes, grilled chicken slices, tomatoes, and dollops of ricotta.
4. Garnish with fresh herbs or greens. Serve warm.
