Italian Sausage with Peppers and Onions Feast

Ingredients:

1 lb Italian sausage links (mild, sweet, or spicy)
2 tbsp olive oil
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 large yellow onion, sliced
3 cloves garlic, minced
1/2 tsp Italian seasoning
Salt and pepper, to taste
1/4 cup chicken broth or white wine (optional, for extra flavor)
Fresh basil or parsley, chopped (for garnish)
Instructions:

Cook the Sausages:
In a large skillet over medium heat, add 1 tbsp of olive oil. Add the sausage links and cook, turning occasionally, until browned on all sides and cooked through (about 10-12 minutes). Remove the sausages from the skillet and set aside.

Sauté the Peppers and Onions:
In the same skillet, add the remaining olive oil. Add the red and green bell peppers and yellow onion, seasoning with a pinch of salt and pepper. Sauté for 5-7 minutes, or until the peppers and onions start to soften.

Add Garlic & Seasoning:
Add the minced garlic and Italian seasoning, cooking for another 1-2 minutes until fragrant.

Combine & Add Broth (Optional):
Slice the cooked sausages and return them to the skillet with the peppers and onions. Add the chicken broth or white wine (if using) to deglaze the pan. Let it simmer for 5 minutes to allow the flavors to meld.

Serve:
Garnish with fresh basil or parsley. Serve hot in hoagie rolls, over pasta, or with a side of crusty bread.

Helpful Tips:

Add Spice: For a little heat, sprinkle some red pepper flakes into the sautéed peppers and onions.
Extra Flavor: Slice the sausages and cook them with the peppers and onions during the last few minutes to infuse more flavor into the veggies.
Serving Ideas: This dish is fantastic served on hoagie rolls, over pasta, or simply with a side of crusty bread to mop up the delicious juices!
