Pecan Pie Cheesecake

Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup melted butter
2 tbsp brown sugar
For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
For the Pecan Pie Topping:
½ cup unsalted butter
½ cup brown sugar
¼ cup corn syrup or maple syrup
1 egg yolk
1 ½ cups chopped pecans
Pinch of salt
Instructions:
1️⃣ Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
2️⃣ Crust: Mix graham cracker crumbs, butter, and brown sugar, then press into the bottom of the pan. Bake for 10 minutes, then let cool.
3️⃣ Cheesecake Layer: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then mix in sour cream. Pour over the cooled crust. Bake for 40-45 minutes, then let cool completely.
4️⃣ Pecan Topping: In a saucepan, melt butter, brown sugar, and corn syrup. Stir in egg yolk, pecans, and salt, then simmer for 2-3 minutes until thickened. Let cool slightly, then pour over the cheesecake.
5️⃣ Chill for at least 4 hours (overnight is best!) before slicing and serving.
