🛒 Ingredients
🍗 Chicken & Seasoning:
4 chicken thighs or breasts
2 tbsp olive oil
4 cloves garlic (minced)
1 tsp paprika
1 tsp dried thyme
1 tsp dried oregano
Salt & black pepper to taste
🍚 Rice Base:
1½ cups uncooked rice
3 cups chicken broth
1 tbsp butter
🥔 Veggies:
2 potatoes (cubed)
1 cup carrots (sliced)
1 bell pepper (chopped)
1 onion (sliced)
👨🍳 Instructions
1️⃣ Prep the Chicken
Preheat oven to 190°C
Mix olive oil, garlic, paprika, thyme, oregano, salt, pepper
Rub seasoning all over chicken
2️⃣ Build the Pan
In a large baking dish, add rice + chicken broth + butter → mix
Add potatoes, carrots, onion, and bell pepper
Place seasoned chicken on top
3️⃣ Bake
Cover with foil and bake for 30 minutes
Remove foil and bake another 15 minutes until chicken is golden and rice is tender
4️⃣ Serve
Let rest 5 minutes
