Honey Soy Glazed Beef and Shrimp with Chive Potatoes

Ingredients:π
For the Beef and Shrimp:
1/2 lb beef sirloin or tenderloin, thinly sliced
1/2 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
Salt and black pepper, to taste
For the Honey Soy Glaze:
1/4 cup soy sauce
3 tbsp honey
1 tbsp rice vinegar (or white vinegar)
1 tbsp sesame oil
1 tsp cornstarch, mixed with 1 tbsp water
1/2 tsp crushed red pepper flakes (optional)
For the Chive Potatoes:
1 1/2 lbs baby potatoes (or Yukon Gold), halved
2 tbsp butter
1/4 cup sour cream
2 tbsp fresh chives, finely chopped
Salt and black pepper, to taste

1. Prepare the Chive Potatoes:
Bring a pot of salted water to a boil. Add the potatoes and cook for 15-20 minutes, or until fork-tender.
Drain the potatoes and return them to the pot. Add butter, sour cream, and chives. Mash lightly to keep a chunky texture. Season with salt and pepper. Cover and keep warm.
2. Make the Honey Soy Glaze:
In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, and crushed red pepper flakes (if using). Heat over medium heat, stirring occasionally.
