Homemade Mexican Carne Guisada

Ingredients
For the carne guisada:

2 lbs beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 onion, chopped
4 cloves garlic, minced
2-3 medium tomatoes, chopped (or 1 can of diced tomatoes)
2 cups beef broth
2-3 medium potatoes, diced (optional)
1 bell pepper, chopped (optional)
2-3 jalapeños or serrano peppers, chopped (adjust for spice preference)
2 teaspoons ground cumin
1 teaspoon oregano
Salt and pepper to taste
For serving:

Flour tortillas
Chopped cilantro (optional, for garnish)
Lime wedges (optional, for serving)
Directions
Brown the beef:

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the meat on all sides for about 5-7 minutes.
Add the vegetables:

Add the chopped onion, minced garlic, and bell pepper (if using) to the pot. Sauté for about 3-5 minutes until the vegetables are soft.
Add tomatoes and broth:

Stir in the chopped tomatoes and cook for another 2 minutes. Then add the beef broth, cumin, oregano, and diced jalapeños or serrano peppers.
Simmer:

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the meat is tender. If using potatoes, add them about 30 minutes before the guisada is done cooking.
Thicken the sauce:

If you prefer a thicker sauce, you can mash some of the potatoes against the side of the pot or remove some broth and mix it with cornstarch, then return it to the pot.
Adjust seasoning:

Taste and adjust seasoning with more salt, pepper, or spices as needed.
Serve:

Serve the carne guisada hot with warm flour tortillas on the side. You can garnish with chopped cilantro and serve lime wedges for added flavor.
