Caramel Apple Cheesecake

Ingredients:
Crust:
2 cups (168g) graham crackers, crumbled fine
2 tablespoons butter, melted
Filling:
1 1/2 cups canned apple pie filling
2 (8-ounce) packages cream cheese, room temperature
1/2 cup (100g) sugar
1/4 teaspoon vanilla extract
2 eggs, room temperature
Topping:
1/4 cup caramel topping
1/2 cup apple pie filling, canned or homemade
Instructions:
Preheat the oven to 350°F (175°C).
Make the Crust:
In a medium bowl, mix the crushed graham crackers and melted butter until the crumbs are fully coated.
Press the mixture into the bottom of a prepared 7-inch springform pan.
Make the Filling:
Spoon the apple pie filling evenly over the crust.
In a large bowl, whip the cream cheese until fluffy. Add the sugar, vanilla, and eggs, and beat until smooth.
Pour the cream cheese mixture over the apple filling.
Bake:
Bake for about 50-55 minutes, or until the center is set.
Cool to room temperature.
Make the Topping:
In a small saucepan over medium heat, add the caramel topping and 1/2 cup of apple pie filling.
Heat over low heat for about 1 minute, stirring occasionally.
Finish the Cheesecake:
Spoon the apple-caramel mixture over the top of the cooled cheesecake and spread evenly.
Refrigerate until ready to serve.
