HOMEMADE FISH AND CHIPS!

As it’s Friday, I thought I’d throw this golden oldie up! This is battered plaice, triple cooked chips, mushy peas, tartare sauce, onion rings and some battered gherkins too.
I coated the plaice in flour before giving a good smothering of the batter made from 130g self raising flour, 200ml sparkling water and 100ml of lager/ale. Then carefully dropped it into the pan that I had heated up vegetable oil in, to crisp up and cook through!
Triple cooked chips were made by chopping spuds into chips before boiling nice and soft. Dried them off, two or three mins in the oil, before getting out and resting in a pan. I did this before the fish so when the fish was done, put the chips back in for another go to crisp up!
Onions sliced up, bit of flour, in the batter, into the pan to crisp up.
When I have no marrowfat peas in, I just make Mushy peas this way. Garden peas were blitzed up after boiling, bit of double cream, salt and pepper.
Tartare sauce, chopped gherkins, finely diced shallot, capers, chopped parsley and some lemon juice, mixed with mayo.
