Grilled Chicken Mediterranean Bowl

**Ingredients:
– 1 boneless, skinless chicken breast (150g)
– ½ avocado, sliced
– 1 small zucchini, spiralized (zucchini noodles)
– ½ red bell pepper, sliced
– ½ yellow bell pepper, sliced
– 50g kalamata olives
– 1 tbsp olive oil
– 1 tsp garlic powder
– 1 tsp paprika
– ½ tsp dried oregano
– Salt & black pepper to taste
– Fresh thyme (for garnish)

**Instructions:
1. Prepare the Chicken:
– In a bowl, mix ½ tbsp olive oil, garlic powder, paprika, oregano, salt, and pepper.
– Coat the chicken breast with the seasoning mixture.
2. Grill the Chicken:
– Heat a grill pan over medium-high heat.
– Cook the chicken for 6-8 minutes per side until fully cooked (internal temp: 165°F/75°C).
– Let it rest for 5 minutes before slicing.
3. Sauté the Vegetables:
– Heat ½ tbsp olive oil in a pan over medium heat.
– Add the sliced bell peppers and sauté for 3-4 minutes until slightly softened.
– Toss in the zucchini noodles, season with salt and pepper, and cook for another 2 minutes.
4. Assemble the Bowl:
– Place the zucchini noodles and sautéed bell peppers in a bowl.
– Top with sliced grilled chicken.
– Add sliced avocado and kalamata olives.
– Garnish with fresh thyme and a sprinkle of black pepper.
