FILET MIGNON WITH MUSHROOM AND ONION SAUCE

❗Ingredients:

2 filet mignon steaks (about 6-8 oz each)
1 cup mushrooms, sliced
1 medium onion, thinly sliced
1 tbsp olive oil
2 tbsp butter
1 cup beef broth
1/4 cup red wine (optional)
2 tbsp Worcestershire sauce
1 tsp fresh thyme 🌿
Salt and pepper to taste

❗Instructions:

Prepare the Steak:

Take the steas out of the fridge 30 minutes before cooking to come to room temperature. Season generously with salt and pepper.

Cook the Filet Mignon:
Heat olive oil in a largeskillet over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes per side, or until the desired doneness (for medium-rare, aim for an internal temperature of 130-135°F).

Remove the steaks from the skillet and set them aside on a plate to rest.

Make the Mushroom and Onion Sauce:
In the same skillet, add butter, then toss in the onions and mushrooms. Cook for about 5 minutes until the onions soften and the mushrooms release their moisture.

Add beef broth and Worcestershire sauce to the skillet, stirring to deglaze. If using, pour in the red wine and bring the mixture to a simmer. Let it cook for 5 minutes to reduce slightly.
Stir in the fresh thyme and adjust seasoning with salt and pepper.

Combine and Serve:
Return the filet mignon steaks to the skillet, spooning the mushroom and onion sauce over the top. Let the steaks simmer in the sauce for 3-4 minutes to reheat and absorb flavors.

Garnish with fresh thyme or chives.
Serve the filet mignon with mashed potatoes, rice, or roasted vegetables to enjoy the rich sauce.
