Deep Fried Marshmallows

Ingredients:

12 large marshmallows
1 cup pancake mix (or flour)
1/4 cup cornstarch
1 tsp baking powder
1/2 cup milk
1 egg
1/2 tsp vanilla extract
1/4 tsp salt
1/2 cup powdered sugar (for dusting)
Vegetable oil (for frying)
🍴 Instructions:

Prepare the Marshmallows:

Make sure the marshmallows are cut in half or left whole, depending on your preference. Some people like to keep them whole for a larger bite, while others prefer them smaller.
Make the Batter:

In a medium-sized bowl, whisk together the pancake mix, cornstarch, baking powder, milk, egg, vanilla extract, and salt until smooth. The batter should be thick enough to coat the marshmallows but not too heavy.
Heat the Oil:

Heat about 2-3 inches of vegetable oil in a deep pot or skillet over medium-high heat. To test if the oil is ready, drop a small amount of batter into the oil—it should sizzle and rise to the surface immediately.
Coat the Marshmallows:

Carefully dip the marshmallows into the batter, making sure they’re fully coated. Use tongs or a fork to help transfer them into the hot oil.
Fry the Marshmallows:

Fry the marshmallows in batches, being careful not to overcrowd the pan. Fry each batch for about 1-2 minutes, or until they’re golden brown and crispy on the outside. They’ll puff up as they cook, and you’ll know they’re done when they’re golden and crispy.
Drain and Dust:

Remove the fried marshmallows from the oil and place them on a paper towel-lined plate to drain excess oil.
Dust the warm marshmallows with powdered sugar for a sweet finishing touch.
Serve:

Serve your Deep Fried Marshmallows immediately while they’re warm and gooey inside. You can enjoy them on their own or with a side of chocolate sauce, caramel, or a scoop of ice cream!
