2 eggs
250ml milk
125g all-purpose flour
1 tbsp melted butter
1 tbsp sugar
Pinch of salt
½ tsp vanilla extract
🍋 Lemon Cream Cheese Filling:
200g cream cheese (softened)
2 tbsp powdered sugar
Zest of 1 lemon
2 tbsp fresh lemon juice
100ml whipped cream
🫐 Topping:
1 cup blackberries
1 tbsp honey or maple syrup
Optional: powdered sugar for dusting
👨🍳 Instructions
1️⃣ Make Crepe Batter
Whisk eggs, milk, flour, butter, sugar, salt, vanilla
Mix until smooth (no lumps)
Rest batter for 10 minutes
2️⃣ Cook Crepes
Heat a non-stick pan
Pour thin layer of batter
Cook 1–2 minutes per side until lightly golden
Repeat until all crepes are done
3️⃣ Make Lemon Cream Filling
Beat cream cheese + powdered sugar
Add lemon zest + lemon juice
