Seafood Bisque with Crab, Shrimp, and Lobster

Ingredients:
1 tbsp olive oil
½ cup onion, finely chopped
½ cup celery, diced
½ cup carrots, diced
2 cloves garlic, minced
4 cups seafood stock (or vegetable broth)
1 cup heavy cream
½ cup white wine (optional)
2 tbsp tomato paste
½ tsp paprika
½ tsp cayenne pepper (optional, for spice)
Salt and pepper to taste
½ lb shrimp, peeled and deveined
½ lb crab meat
½ lb cooked lobster meat, chopped
2 tbsp butter
2 tbsp all-purpose flour
Fresh parsley, chopped (for garnish)
Directions:
Sauté the Vegetables:
Heat olive oil in a large pot over medium heat.
Add onion, celery, and carrots, and sauté for 5 minutes until softened.
Stir in garlic and cook for another 30 seconds until fragrant.
Build the Base:
Add tomato paste, paprika, cayenne pepper, salt, and pepper. Stir well.
Pour in white wine (if using) and let it simmer for 2 minutes.
Make the Bisque:
Sprinkle in flour and stir continuously for 1-2 minutes.
Slowly add seafood stock while stirring, ensuring no lumps form.
Bring to a simmer and let cook for 10-15 minutes until slightly thickened.
Add the Seafood:
Stir in shrimp, crab, and lobster. Let cook for 5-7 minutes until shrimp turns pink and opaque.
Reduce heat to low, add heavy cream, and stir until fully incorporated.
Simmer for another 5 minutes, but do not boil.
Finish & Serve:
Stir in butter for a rich finish.
Adjust seasoning as needed.
Serve hot, garnished with fresh parsley.
