Ingredients:
For the Sandwich:
1 large Italian sub roll (or hoagie roll)
2 oz Genoa salami
2 oz capicola
2 oz mortadella (or ham)

2-3 slices of red onion
6-8 slices of banana peppers
2 tbsp black olives, sliced (optional)
For the Dressing:
2 tbsp olive oil
1 tbsp red wine vinegar
1/2 tsp dried oregano
1/2 tsp garlic powder
Salt and black pepper, to taste
Optional Garnishes:
Mayonnaise or mustard
Pickles
Crushed red pepper flakes
Instructions:
1. Prepare the Sub Roll:
Slice the Italian roll in half lengthwise, leaving one side slightly attached.
Lightly toast the roll for extra crunch if desired.
2. Layer the Meats and Cheese:
On the bottom half, layer the Genoa salami, capicola, mortadella, and provolone cheese.
3. Add the Vegetables:
Top the meats with shredded lettuce, slices of tomato, red onion, and banana peppers. If using, add black olives.
4. Drizzle the Dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper. Drizzle this mixture over the sandwich filling.
