150g pork shoulder (finely chopped)

For the pastry:
300g all-purpose flour
100g lard
120ml water
½ tsp salt
For finishing:
1 egg (beaten)
Optional: gelatin stock (for traditional finish)

Prepare the pastry
Heat water and lard until melted. Mix with flour and salt to form a dough. Knead until smooth and let rest.
Make the filling
Combine ground pork, chopped pork, garlic, and spices. Mix well.
Shape the pie
Roll out pastry and line a greased tin. Add filling and pack tightly. Cover with pastry lid and seal edges.
Egg wash
Brush the top with beaten egg and make a small hole in the center.
Bake
Bake at 180°C for 1 hour 15 minutes until golden brown.
Optional traditional step
