Cheese & Onion Potato Pie with Corned Beef & Beans 🧀🥔🧅🥫

Creamy mashed potato loaded with cheese and onions, baked into a golden pie, served with slices of corned beef and baked beans — proper, satisfying comfort food.

Ingredients (Serves 4):

For the Cheese & Onion Potato Pie:
• 4 large potatoes, peeled and chopped
• 1 large onion, finely chopped
• 1 ½ cups grated cheddar cheese
• 2 tbsp butter
• 2 tbsp milk or cream
• Salt & pepper to taste
• Optional: pinch of mustard powder or paprika for a kick

For the Sides:
• 1 can corned beef, sliced or warmed
• 1 can baked beans
Instructions:
1. Boil the potatoes
Cook potatoes until tender. Drain and mash with butter, milk, and seasoning.
2. Cook the onions
Sauté onions in a little butter or oil until soft and lightly golden.
3. Mix & layer
Stir onions and most of the cheese into the mash. Spoon into a baking dish, top with remaining cheese.
4. Bake the pie
Bake at 375°F (190°C) for 20–25 minutes until golden and bubbly.
5. Heat the sides
Warm corned beef (optional: fry for a crispy edge) and baked beans.
6. Serve
Plate generous scoops of the pie with corned beef and a ladle of beans. Finish with black pepper.
