ππ€π Easy Blackberry Cheesecake

This Blackberry Cheesecake is a showstopper! Perfect for any occasion and so easy to make. ππ
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
3 (8 oz) packages cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1/2 cup heavy cream
2 cups fresh blackberries
1/2 cup blackberry preserves
Directions:
Preheat your oven to 325Β°F (163Β°C). Grease a 9-inch springform pan.
In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan.
In a large bowl, beat the cream cheese and 1 cup sugar with an electric mixer until smooth. Add the vanilla extract and mix well.
Add the eggs one at a time, beating well after each addition. Mix in the sour cream and heavy cream until just combined.
Pour half of the cream cheese mixture over the crust. Layer with blackberries and dollops of blackberry preserves. Pour the remaining cream cheese mixture on top and smooth the surface.
Bake in the preheated oven for 60-70 minutes, or until the center is set and the top is lightly browned. Allow the cheesecake to cool in the oven with the door slightly open for about an hour.
Refrigerate the cheesecake for at least 4 hours, or overnight, before serving. Garnish with additional blackberries and a drizzle of blackberry preserves.
