Avocado stuffed with tuna

π Ingredients:
πΉFor stuffed avocados:
2 ripe avocados, cut in half and peeled π₯
1 tin of tuna, drained π
1β2 cup tomatoes, cut in half π
1β4 cup red onion, finely chopped di
2 tablespoons of fresh parsley or coriander, minced πΏ
1 spoonful of lemon juice π
1 tablespoon of olive oil ‘
1β2 teaspoon of salt di
1β2 teaspoon black pepper
πΉ Optional add-on components:
1 tablespoon of Greek yogurt or mayonnaise to create creaminess
1β2 teaspoon of Dijion mustard for extra flavour
1 tablespoon chopped pickles for crunchiness
π© π³ Instructions:
1οΈβ£ Prepare the avocados
Cut the avocados in half and remove the nut.
Taking out some more meat to make room for stuffing, then shred it and set it aside.
2οΈβ£ Make Tuna Salad
In a bowl, mix tuna, tomatoes, red onion, parsley and avocado pulp.
Add lemon juice, olive oil, salt and black pepper.
Mix well, making sure all the ingredients are covered.
3οΈβ£ Fill up the avocados
Pour the tuna compound in each avocado half.
