Mediterranean Stuffed Salmon 🐟🍅

A flavorful, elegant dish with tender salmon, sun-dried tomatoes, spinach, and creamy feta!
Ingredients
1 lb sockeye salmon, cut into 4 fillets
½ cup sun-dried tomatoes, drained & chopped
3 cups baby spinach
½ cup feta cheese crumbles
Sea salt, to taste
1 tbsp avocado oil
Optional Add-Ins:
1 cup fresh basil
2 tsp Italian seasoning
Instructions
Preheat Oven – Set to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare Filling – Sauté sun-dried tomatoes over medium heat until sizzling. Add spinach and cook until wilted. Remove from heat, mix in feta and sea salt, then set aside.
Slice Salmon – Place fillets on a cutting board and carefully slice horizontally, leaving a small section attached to create a pocket.
Season & Stuff – Brush salmon with avocado oil, season with salt, and stuff each fillet with the spinach mixture.
Bake – Arrange on the baking sheet and bake for 25–30 minutes until cooked through.
Serve – Enjoy warm with your favorite sides!
