For the dough:
500g bread flour
350g water (room temp)
100g active sourdough starter
10g salt
Optional for better crust:
Rice flour (for dusting)
Olive oil (for bowl coating)

Combine sourdough starter + water in a large bowl. Add flour and mix until no dry spots remain. Let rest 30β45 minutes (autolyse).
2. π§ Add salt
Sprinkle salt over dough and mix until fully incorporated.
3. π Stretch & fold
Over the next 2β3 hours, stretch and fold the dough every 30β40 minutes to build strength.
4. β³ First rise (bulk fermentation)
Cover and let the dough rise for 6β10 hours at room temperature until doubled and bubbly.
5. π Shape the dough
Turn onto a floured surface, shape into a tight round loaf. Let rest 20 minutes, then reshape if needed.

Place in a floured banneton or bowl. Refrigerate 8β12 hours (cold proof for best flavor).
7. π₯ Bake
Preheat oven to 240Β°C (465Β°F) with a Dutch oven inside.
Score the dough, place inside, and bake:

20β25 min uncovered until deep golden crust
