🛒 Ingredients
🐖 Main
1 kg pork ribs (cut into pieces)
3 tbsp oil
1 onion (chopped)
6 cloves garlic (minced) 🧄
2 potatoes (cubed) 🥔
1 carrot (sliced) 🥕
1 red & green bell pepper 🌶️
🍅 Caldereta Sauce
1 ½ cups tomato sauce
2 tbsp tomato paste
1 cup beef or pork broth
2 tbsp liver spread (key flavor!)
1 tbsp soy sauce
1–2 tsp sugar
🌶️ Extra Spicy Kick
2–4 red chilies (siling labuyo or chili flakes) 🔥
1 tsp chili powder (optional)
👨‍🍳 Instructions
Brown the ribs
Heat oil in a pot
Sear pork ribs until golden on all sides
Sauté aromatics
Add garlic and onion
Cook until fragrant
Build the sauce base
Add tomato paste + tomato sauce
Stir well for deep flavor
Simmer ribs
Add broth, soy sauce, sugar, and chilies
Cover and simmer 1–1.5 hours until tender
Add vegetables
Add potatoes and carrots
Cook until soft and sauce thickens
Make it creamy & rich
Stir in liver spread
Mix until sauce becomes smooth and rich
Finish
Add bell peppers last
Adjust spice level 🔥
