STUFFED SALMON

I love salmon just cooked in a pan on the stove top but this air fried version blows that right out of the window. It’s moist, very very tasty and looks gorgeous on a plate. Honestly it is so easy too.
It’s a combination of many recipes I’ve seen and read but here’s what I did
STUFFED SALMON
2 salmon steaks
1/4 cup small green (raw) prawns (chopped into small pieces)
1/2 cup small whole green prawns to add to top of sauce
2 tablespoons grated Parmesan cheese
1/2 cup cream cheese
1 tablespoon sour cream or greek yoghurt
2 tablespoons diced celery
2 tablespoons sweet corn
1 teaspoon garlic powder
1 tablespoon lemon juice
Pepper and salt
Chopped parsley for garnish
Fry celery and spring onion in a little oil in a pan on stove top until soft. Remove and place in a bowl.
Fry the whole prawns until cooked.
Fry the chopped prawns until just turned colour and then remove and add to the bowl with celery and spring onion.
Keep the whole prawns on one side.
Combine the cream cheese, parmesan cheese, sour cream, sweet corn, celery, spring onion, garlic powder, pepper and salt and lemon juice and mix with chopped prawn pieces until combined.
Slice a large slit into each salmon fillet. Oil the top of the salmon and sprinkle with smoked paprika.
Stuff the mixture into the slits in the salmon and pile the rest on top of the salmon steak.
Sprinkle smoked paprika over the topping and the salmon.
Air fry 180C/360F for 8 minutes and check if done. The salmon should be paler in colour and will flake if tested. If not done set air fryer for another 5 minutes at 200F/400F and commence air frying. Stop when 3 minutes left and top the sauce with remaining prawns and complete air frying. This salmon took 13 minutes in total air frying time.
