Grilled Lobster Tails with Smoked Paprika Butter

Ingredients:
For the Lobster Tails:
4 lobster tails (about 6-8 oz each)
2 tbsp olive oil
Salt and black pepper (to taste)
For the Smoked Paprika Butter:
1/2 cup unsalted butter (softened)
1 tsp smoked paprika
1 clove garlic (minced)
1 tbsp lemon juice
1 tbsp fresh parsley (chopped, for garnish)
Pinch of cayenne pepper (optional, for heat)
Instructions:
1. Prepare the Lobster Tails:
Using kitchen scissors, cut down the top shell of each lobster tail lengthwise, stopping just before the tail fin.
Gently loosen the meat from the shell without detaching it completely, and lift it slightly to rest on top of the shell.
Brush the lobster meat with olive oil and season with salt and black pepper.
2. Make the Smoked Paprika Butter:
In a small bowl, combine the softened butter, smoked paprika, garlic, lemon juice, and a pinch of cayenne pepper (if using). Mix well.
3. Preheat the Grill:
Preheat your grill to medium-high heat (about 375-400ยฐF). Oil the grates to prevent sticking.
4. Grill the Lobster Tails:
Place the lobster tails flesh-side down on the grill. Cook for 4-5 minutes, until lightly charred.
Flip the tails over, brush generously with the smoked paprika butter, and cook for another 4-6 minutes, or until the meat is opaque and cooked through (internal temperature of 135-140ยฐF).
5. Serve:
Remove the lobster tails from the grill and brush with additional smoked paprika butter. Garnish with fresh parsley and serve with lemon wedges.
Serving Suggestions:
Pair with grilled vegetables, garlic butter rice, or a fresh green salad for a complete meal.
