Roasted Veggie Pasta and Feta

Ingredients

For roasted vegetables:

1 zucchini, cut into cubes

1 red pepper, cut into cubes

1 yellow pepper, cut into cubes

1 red onion, chopped

1 cup cherry tomatoes, cut in half

Other ingredients :

200 g pasta (fusilli, penne or farfalle)

150 gm of feta, cut into cubes

2 tablespoons of the olive oil

1 teaspoon of dried oregano

1 teaspoon dried basil (or freshly chopped basil)

Salt and pepper to taste

1 clove of garlic, minced

1 pinch red pepper flakes (optional)

Preparation

1. Preheat the oven to 200°C.

2. Prepare the vegetables: on a baking plate covered with sulfurized paper, arrange the zucchini, peppers, onion and cherry tomatoes. Spray olive oil, sprinkle oregano, basil, salt, pepper and minced garlic. Mix it up well.

3. Roast the vegetables in the oven for about 20-25 minutes, until tender and slightly caramelized.

4. Cook pasta according to instructions on package. Suck it up and book it.

5. Assemble the dish: In a large salad bowl or directly on the cooking plate, mix the hot pasta with the roasted vegetables. Add the feta in cubes and mix gently.

6. Serve immediately, topped with fresh basil and a fillet of olive oil if desired.
