Roast Rack of Lamb with Rosemary

Ingredients:
1 rack of lamb (8 ribs, about 1.5 pounds)
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
1 tsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
1/2 cup breadcrumbs (optional, for a crusted finish)
1 tbsp unsalted butter (optional, for finishing)
Instructions:
1. Preheat the Oven:

Preheat your oven to 450°F (230°C). Line a baking sheet with foil or parchment paper.
2. Prepare the Lamb:

Pat the rack of lamb dry with paper towels and trim any excess fat or silver skin.
Score the fat side of the lamb lightly in a crisscross pattern, being careful not to cut into the meat.
3. Make the Rosemary-Garlic Rub:

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, thyme, Dijon mustard, salt, and pepper into a paste.
4. Season the Lamb:

Rub the rosemary-garlic mixture generously over the entire rack of lamb, ensuring even coverage.
5. (Optional) Add a Breadcrumb Crust:

If you want a crusted lamb, press breadcrumbs into the seasoned lamb after applying the rosemary-garlic rub.
6. Sear the Lamb:

Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil and sear the lamb, fat side down, for 2-3 minutes or until golden brown. Flip and sear the other side for 1-2 minutes.
7. Roast the Lamb:

Transfer the skillet (or place the lamb on the prepared baking sheet) into the preheated oven. Roast for 15-20 minutes for medium-rare (internal temperature of 125°F (51°C)) or longer for your preferred doneness.
Use a meat thermometer to check the temperature, as lamb cooks quickly.
8. Rest the Lamb:

Remove the lamb from the oven and cover it loosely with foil. Let it rest for 5-10 minutes to allow the juices to redistribute.
9. Serve:

Slice the rack into individual chops by cutting between the ribs. Serve immediately with your favorite sides, such as roasted vegetables or garlic mashed potatoes.
