PEPPER STEAK STIR FRY

INGREDIENTS

1 lb beef sirloin or flank steak, thinly sliced against the grain
2 tablespoons cornstarch
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced (optional)
1 medium onion, sliced
3 garlic cloves, minced
1 teaspoon fresh ginger, grated (optional)

For the Sauce:
1/3 cup soy sauce (low sodium preferred)
2 tablespoons oyster sauce
1 tablespoon cornstarch
1 tablespoon brown sugar
1 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup water or beef broth
INSTRUCTIONS
Prepare the Beef:
Toss the beef slices in 2 tablespoons of cornstarch until well coated. This helps achieve a tender and velvety texture when cooked.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Sear the beef in batches for about 2 minutes per side, until browned but not fully cooked. Remove and set aside.
Cook the Vegetables:
Add the remaining oil to the skillet. Sauté the bell peppers and onions for 2-3 minutes, keeping them crisp yet tender.
Stir in the garlic and ginger, cooking for an additional 1 minute until fragrant.
Make the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, brown sugar, sesame oil, red pepper flakes (if using), and water or beef broth.
Pour the sauce into the skillet with the vegetables, stirring until it begins to thicken.
Combine and Serve:
Return the beef to the skillet and toss to coat everything in the sauce. Cook for another 2-3 minutes until the beef is fully cooked and the sauce is glossy.
Garnish with sesame seeds and green onions.
