Poor Man’s Husband Casserole

Protein: ~30g per serving
A budget-friendly classic with layers of seasoned beef, rich tomato sauce, creamy sour cream, and melted cheese—all baked over egg noodles for pure comfort.

Ingredients (serves 6):
• 1 lb ground beef
• 1 small onion (diced)
• 2 cups tomato sauce or pasta sauce
• 1 tsp Italian seasoning
• Salt & pepper to taste
• 8 oz egg noodles (cooked & drained)
• 1 cup sour cream
• 1½ cups shredded cheddar or mozzarella
• 2 tbsp butter (melted, optional for noodles)

Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. In a skillet, cook ground beef and onion until browned. Drain fat. Add tomato sauce, seasoning, salt & pepper. Simmer 5 min.
3. In a bowl, mix cooked noodles with sour cream and melted butter (if using).
4. Layer half the noodles, then meat sauce, then cheese. Repeat layers.
5. Cover and bake 25 minutes. Uncover and bake 10 more until bubbly and golden.
6. Let cool 5 minutes before serving.
