Succulent Glazed Lamb Chops with Creamy Mashed Potatoes
Ingredients:
4 lamb chops
Salt and pepper, to taste
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon fresh rosemary, chopped
1 teaspoon olive oil
4 medium potatoes, peeled and cubed
1/4 cup milk (or as needed)
2 tablespoons butter
Fresh chives, chopped (for garnish)
Directions:
Prepare the Glaze: In a small bowl, whisk together honey, soy sauce, balsamic vinegar, garlic, and rosemary.
Season the Lamb: Pat lamb chops dry and season with salt and pepper on both sides.
Sear the Lamb: Heat olive oil in a skillet over medium-high heat. Add lamb chops and sear for 3-4 minutes per side until browned.
Glaze the Lamb: Pour the glaze over the lamb chops, reduce heat to low, and let the sauce simmer, basting the lamb with the glaze until it thickens and the lamb is cooked to your desired doneness.
Cook the Potatoes: In a pot of boiling salted water, cook potatoes for 15-20 minutes until fork-tender.
Mash the Potatoes: Drain potatoes and mash with milk and butter until smooth and creamy. Season with salt and pepper to taste.
Serve: Place a scoop of mashed potatoes on each plate, top with a glazed lamb chop, and drizzle with remaining glaze. Garnish with fresh chives.
