Classic Grilled Cheese Sandwich

Ingredients
• 2 slices of bread (sourdough, white, or your preferred type)
• 2 tablespoons butter, softened
• 1 slice of cheddar cheese
• 1 slice of mozzarella cheese
• 1 tablespoon chopped fresh chives (optional)

Instructions
1. Butter the Bread:
o Spread butter on one side of each slice of bread, ensuring an even coating.
2. Assemble the Sandwich:
o Place one slice of bread, buttered side down, in a skillet or on a griddle.
o Add a slice of cheddar cheese and a slice of mozzarella cheese on top of the bread.
o Place the second slice of bread on top, buttered side up.
3. Cook the Sandwich:
o Heat the skillet or griddle over medium heat.
o Cook the sandwich for 3-4 minutes per side, or until the bread is golden brown and the cheese has fully melted. Press down slightly with a spatula to ensure an even, crispy crust.
4. Serve:
o Remove the sandwich from the skillet, cut it in half, and sprinkle with freshly chopped chives, if desired.
