Avocado & Scrambled Egg Toast with Cherry Tomatoes & Red Onion

Ingredients

• 2 slices white or whole wheat bread
• 1 ripe avocado
• 2 large eggs
• 1 tbsp butter
• ¼ tsp salt
• ¼ tsp black pepper
• 4 cherry tomatoes, halved
• 2 tbsp red onion, diced
• ½ tsp garlic powder
• ½ tsp lemon juice
• ¼ tsp paprika (optional)

Instructions

1️⃣ Toast the Bread:
• Lightly toast the bread slices until they’re golden brown and crispy.
• Set aside while preparing the toppings.

2️⃣ Prepare the Scrambled Eggs:
• In a small bowl, whisk the eggs with a pinch of salt and black pepper.
• Heat 1 tbsp butter in a non-stick skillet over low-medium heat.
• Pour in the eggs and gently stir, cooking until soft and fluffy (about 2-3 minutes).
• Remove from heat once cooked to your desired consistency.

3️⃣ Mash the Avocado:
• In a bowl, mash the ripe avocado using a fork until smooth (or leave it chunky if preferred).
• Stir in the lemon juice, garlic powder, a pinch of salt, and black pepper.
• Mix until well combined.

4️⃣ Assemble the Toast:
• Spread a generous layer of the mashed avocado over the toasted bread.
• Top with the scrambled eggs.
• Arrange the halved cherry tomatoes and diced red onion over the eggs.
• Sprinkle with paprika or an extra grind of black pepper for added flavor.

5️⃣ Serve & Enjoy:
• Plate with a lemon wedge for an extra citrusy drizzle, if desired.
