Best Ever Beef Roast

Ingredients:
– 2 pounds beef roast
– ½ cup all-purpose flour
– 2 tablespoons olive oil
– ½ teaspoon black pepper
– 1 teaspoon salt
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 bay leaf
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 cup beef broth
– 1 cup red wine (optional)
Instructions:
1. Preheat the oven to 325°F (160°C).
2. In a small bowl, mix together the flour, salt, black pepper, thyme, rosemary, and bay leaf.
3. Rub the flour mixture all over the beef roast, making sure to coat it evenly.
4. Heat the olive oil in a large Dutch oven over medium-high heat.
5. Sear the beef roast on all sides until browned, about 2-3 minutes per side.
6. Remove the beef roast from the pot and set it aside.
7. Add the chopped onion to the pot and cook until it’s softened and caramelized, about 10-15 minutes.
8. Add the minced garlic to the pot and cook for 1 minute.
9. Add the beef broth and red wine (if using) to the pot, scraping up any browned bits from the bottom.
10. Return the beef roast to the pot and bring the liquid to a simmer.
11. Cover the pot with a lid and transfer it to the preheated oven.
12. Roast the beef for 2-3 hours or until it’s tender and falls apart easily.
13. Remove the pot from the oven and let the beef rest for 10-15 minutes before slicing.
