Mexican Green Beans and Potato Skillet

Ingredients:
2 cups green beans, trimmed
2 medium potatoes, diced
1 lb pork or beef, cut into small pieces
1 medium onion, diced
2 cloves garlic, minced
1 medium tomato, diced
1 tsp ground cumin
1/2 tsp chili powder
Salt and pepper, to taste
1/4 cup fresh cilantro, chopped
2 tbsp olive oil
Instructions:
Heat olive oil in a large skillet over medium heat. Add the diced pork or beef and cook until browned on all sides.
Add the onions and garlic, and cook for another 3-4 minutes until softened.
Stir in the diced potatoes and cook until they begin to soften, about 5-7 minutes.
Add the green beans and tomatoes, followed by cumin, chili powder, salt, and pepper. Mix everything together.
Pour in a little water to help cook the vegetables, cover, and let it simmer for about 10-15 minutes until the potatoes are tender and the green beans are cooked through.
Garnish with fresh cilantro before serving.
