Buffalo Chicken Cheesesteak Stuffed Shells

Tender pasta shells stuffed with spicy buffalo chicken, sautéed peppers, onions, and loads of cheese—baked to creamy, melty perfection with just the right kick!
Ingredients (serves 4–6):
For the Filling:
• 2 cups cooked chicken (shredded)
• ½ cup buffalo wing sauce
• 1 tbsp ranch or blue cheese dressing
• 1 bell pepper (thinly sliced)
• ½ onion (thinly sliced)
• 1 cup shredded mozzarella or provolone
• ¼ cup crumbled blue cheese (optional)
• 20 jumbo pasta shells (cooked al dente)
For the Topping:
• ½ cup buffalo sauce mixed with ¼ cup cream or ranch
• 1 cup shredded cheese for topping
• Fresh parsley or green onions for garnish
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13” baking dish.
2. Sauté peppers and onions in a skillet until soft. Let cool slightly.
3. In a bowl, mix chicken, buffalo sauce, ranch, sautéed veggies, mozzarella, and blue cheese if using.
4. Fill each shell generously with the chicken mixture and arrange in baking dish.
5. Pour sauce mixture over shells and top with shredded cheese.
6. Cover and bake for 20 minutes, then uncover and bake 10 more until bubbly and golden.
7. Garnish and serve hot!
