2–4 lamb shanks

1 large onion, chopped
3 carrots, chopped

2 cups red wine
2 cups beef stock

1 tsp salt
1 tsp black pepper

4 large potatoes, peeled & chopped
3 tbsp butter
½ cup cream or milk
3 garlic cloves, roasted or minced

Season lamb shanks with salt and pepper.
Sear in hot oil until browned on all sides.
Remove and sauté onions, carrots, and garlic.
Stir in tomato paste and cook 1–2 minutes.
Pour in red wine and reduce slightly.
Add beef stock, rosemary, and thyme.
Return lamb shanks to pot, cover, and braise at 325°F (160°C) for 2.5–3 hours until tender.
🥔 Mashed Potatoes
Boil potatoes until soft.
Mash with butter, cream, garlic, salt, and pepper until smooth and creamy.
