6–8 eggs 🥚
3 tbsp mayonnaise
1 tsp mustard
1 tsp vinegar or lemon juice 🍋
Salt & black pepper
½ tsp paprika (plus extra for topping)

Boil eggs
Place eggs in boiling water for 10–12 minutes. Cool in ice water.
Peel & cut
Peel eggs and slice them in half lengthwise.
Remove yolks
Scoop out yolks into a bowl.
Make filling
Mash yolks with mayo, mustard, vinegar, salt, pepper, and paprika until smooth.
Fill eggs
Spoon or pipe mixture back into egg whites.
Garnish & serve
Sprinkle paprika and add chives if desired.
