500g ground beef
1 egg
½ cup breadcrumbs
2 cloves garlic (minced)
1 tsp paprika
1 tsp cumin
1 tsp chili powder
Salt & black pepper
🌶️ Enchilada Sauce:
2 cups enchilada sauce (store-bought or homemade)
1 tsp smoked paprika
1 tsp garlic powder
🧀 Topping:
1½ cups shredded cheddar or Mexican blend cheese
¼ cup chopped cilantro
½ red onion (sliced)
👨🍳 Instructions
1️⃣ Make Meatballs
Preheat oven to 190°C
In a bowl, mix ground beef, egg, breadcrumbs, garlic, and spices
Form into small meatballs
