Grilled Chicken Gyros with Tzatziki Sauce & Veggies

Ingredients
For the Grilled Chicken
1 lb boneless, skinless chicken thighs or breasts
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
For the Tzatziki Sauce
1 cup Greek yogurt
1/2 cucumber, grated and drained
1 clove garlic, minced
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Juice of 1/2 lemon
Salt and pepper to taste
For the Veggies
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 red onion, thinly sliced
1 bell pepper, sliced
For Serving
4 pita bread or flatbreads
Fresh parsley for garnish (optional)
Instructions
Marinate the Chicken
Prepare Marinade
In a bowl, mix olive oil, minced garlic, oregano, paprika, salt, and pepper.
Marinate Chicken
Add the chicken to the bowl, coating it well. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
Prepare the Tzatziki Sauce
Mix Sauce
In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Stir well and refrigerate until ready to use.
Grill the Chicken
Preheat Grill
Preheat your grill or grill pan over medium-high heat.
Cook Chicken
Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for a few minutes before slicing.

While the chicken is grilling, prepare the veggies by slicing the tomatoes, cucumber, red onion, and bell pepper.

Warm the pita bread on the grill for a minute. On each pita, layer sliced grilled chicken, fresh veggies, and a generous dollop of tzatziki sauce.

Sprinkle with fresh parsley if desired.
