Thanksgiving Leftover Turkey and Cranberry Pizza

A creative, sweet-and-savory way to transform your holiday leftovers into a gourmet delight in just minutes!
Ingredients
1 pre-made pizza crust (or homemade if you prefer)
1 cup of shredded, cooked turkey (use your Thanksgiving leftovers)
1/2 cup of tart cranberry sauce
1 cup of shredded mozzarella cheese
1/4 cup of creamy goat cheese, crumbled (optional for extra tang)
1/2 cup of fresh baby spinach leaves
1/4 cup of red onion, thinly sliced for a sharp bite
2 tablespoons of extra-virgin olive oil
1 tablespoon of fresh rosemary, finely chopped (optional, for garnish)
A pinch of salt and freshly ground black pepper, to taste
Instructions
Preheat Your Oven
Set your oven to 425°F (220°C). Lay your pizza crust on a baking sheet or pizza stone.
Prep the Crust
Brush the entire surface of the crust with olive oil to help it bake to a golden, crispy perfection.
Spread the Cranberry Sauce
Use a spatula to evenly spread the cranberry sauce over the crust, creating a sweet-tart base layer for your toppings.
Layer on Toppings
Distribute the shredded turkey across the crust. Add a layer of baby spinach leaves and scatter the thinly sliced red onion on top for added freshness and crunch.
Add the Cheese
Sprinkle the mozzarella cheese evenly over the toppings. For an extra creamy tang, add the crumbled goat cheese as well.
Bake to Perfection
Transfer the pizza to the preheated oven. Bake for 10-12 minutes, or until the cheese is fully melted, bubbling, and the crust is golden around the edges.
Garnish and Serve
Take the pizza out of the oven and sprinkle it with freshly chopped rosemary for an aromatic finish. Season with salt and black pepper to taste, then slice and serve while it’s still hot.
