Pan-Seared Salmon with Dill Sauce

Ingredients

For the Salmon:
– 4 salmon fillets (6 oz each)
– 1 tbsp olive oil
– 1 tbsp butter
– 1/2 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp garlic powder
– 1/2 tsp paprika (optional)
– 1 lemon, sliced (for serving)

For the Dill Sauce:
– 1/2 cup Greek yogurt or sour cream
– 1 tbsp mayonnaise (optional, for extra creaminess)
– 1 tbsp fresh lemon juice
– 1 tsp lemon zest
– 1 tbsp fresh dill, finely chopped
– 1 clove garlic, minced
– 1/4 tsp salt
– 1/4 tsp black pepper

Directions

1. **Prepare the Dill Sauce:** In a small bowl, mix Greek yogurt (or sour cream), mayonnaise (if using), lemon juice, lemon zest, fresh dill, minced garlic, salt, and black pepper. Stir well and refrigerate until ready to serve.
2. **Season the Salmon:** Pat the salmon fillets dry with a paper towel. Season both sides with salt, black pepper, garlic powder, and paprika if using.
3. **Heat the Pan:** In a large skillet over medium-high heat, heat the olive oil and butter until hot but not smoking.
4. **Sear the Salmon:** Place the salmon fillets skin-side down in the pan. Cook for 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes, or until the salmon is opaque and flakes easily with a fork.
5. **Serve:** Remove the salmon from the pan and let it rest for a minute. Drizzle with fresh lemon juice and serve with the chilled dill sauce.
6. **Enjoy!** Pair with roasted vegetables, rice, or a fresh salad.
