Lasagna Soup 🍲✨

First time making this, but it definitely won’t be the last! I don’t think I’ve ever made a soup with more flavor.

Ingredients:
1 lb ground beef or Italian sausage
1 onion, chopped
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
4 cups chicken or vegetable broth
2 cups uncooked pasta (like ziti or fusilli)
2 teaspoons Italian seasoning
Salt and pepper, to taste
1 cup ricotta cheese
1 cup shredded mozzarella cheese
Fresh basil or parsley, chopped (for garnish)
Directions:
Cook the Meat: In a large pot, brown the ground beef or sausage over medium heat. Drain any excess fat.
Add Aromatics: Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
Add Tomatoes and Broth: Stir in the crushed tomatoes, chicken or vegetable broth, and Italian seasoning. Bring to a simmer.
Cook the Pasta: Add the uncooked pasta and cook according to package instructions until al dente.
Season: Taste and season with salt and pepper as needed.
Finish with Cheese: Stir in the ricotta and half of the mozzarella cheese until melted and combined.
Serve: Ladle into bowls and top with the remaining mozzarella cheese and fresh herbs.
