Juicy, tender lamb shank roasted with a flavorful herb crust, served with caramelized vegetables – a hearty and festive dish! 🍖✨
Ingredients:
1 lamb shank
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 cup baby potatoes
1 cup carrots, sliced
Directions:
Preheat oven to 375°F (190°C). Rub lamb shank with olive oil, rosemary, and thyme.
Arrange baby potatoes and carrots around the lamb in a baking dish.
Roast for 1.5-2 hours, basting occasionally with pan juices.
Serve hot with vegetables.
