Ingredients (makes 2 sandwiches):
• 4 hard-boiled eggs (chopped)
• 2 tbsp mayonnaise
• 1 tsp Dijon mustard (optional)
• 1 tbsp finely chopped celery or green onion
• Salt & black pepper to taste
• 4 slices bread (white, whole grain, or rye)
• Optional: lettuce, tomato slices, paprika
Instructions:
