Chicken Shawarma

Ingredients:
For the Marinade:

2 lbs boneless chicken thighs (or breasts)
3 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon cayenne pepper (optional)
1 teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon black pepper
Juice of 1 lemon
For Serving:

Pita bread or flatbread
Sliced cucumbers, tomatoes, and red onion
Tzatziki or garlic sauce
Instructions:
1. Marinate the Chicken:
In a large bowl, combine olive oil, garlic, spices, lemon juice, salt, and pepper.
Add the chicken, coating well. Cover and marinate in the fridge for at least 2 hours or overnight.
2. Cook the Chicken:
Preheat a skillet or grill over medium-high heat.
Cook the chicken for 5-7 minutes per side until fully cooked and slightly charred. Let it rest, then slice into strips.
3. Assemble the Shawarma:
Warm pita bread and layer with chicken, veggies, and your choice of sauce.
