Tender strips of beef, crisp bell peppers, and a rich, savory sauce—this pepper steak hits every note of sweet, salty, and umami in one sizzling stir-fry.
Ingredients (serves 4):
• 1½ lbs flank or sirloin steak (thinly sliced against the grain)
• 2 tbsp soy sauce
• 1 tbsp cornstarch
• 2 tbsp oil (divided)
• 1 red bell pepper (sliced)
• 1 green bell pepper (sliced)
• 1 onion (sliced)
• 3 garlic cloves (minced)
• 1 tsp fresh ginger (minced)
For the Sauce:
• ¼ cup soy sauce
• 2 tbsp oyster sauce
• 1 tbsp brown sugar
• 1 tbsp rice vinegar
• ½ tsp black pepper
• ¼ cup beef broth or water
Instructions:
1. Toss beef with 2 tbsp soy sauce and cornstarch; let marinate for 10–15 min.
2. Heat 1 tbsp oil in a large skillet or wok. Sear beef until browned, then remove.
3. Add remaining oil, then sauté peppers, onion, garlic, and ginger until just tender.
4. Return beef to pan. Stir in sauce ingredients and cook 2–3 min until glossy and coated.
5. Serve hot with rice or noodles.
