Ingredients:
	•	1.5kg whole chicken
	•	4 carrots, 1 onion, 2 parsnips
	•	4 potatoes
	•	Oil, salt, pepper, herbs
	•	Gravy to serve
Instructions:
	1.	Rub chicken with oil, salt, pepper, and herbs.
	2.	Roast at 180°C for 1.5 hrs.
	3.	Roast root veg and potatoes separately.
	4.	Rest chicken before carving, serve with gravy and veg.
