GRILLED LOBSTER WITH GARLIC AND HERB BUTTER

INGREDIENTS
4 lobster tails (6-8 ounces each)
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon fresh lemon juice
½ teaspoon smoked paprika (optional)
Salt and black pepper, to taste
Lemon wedges, for serving
INSTRUCTIONS
1. Prepare the Lobster Tails:
Using kitchen shears, cut through the top shell of each lobster tail, stopping at the base. Gently pull the meat upward, separating it from the shell, and lay it on top of the shell for presentation.
2. Make the Garlic Herb Butter:
In a small bowl, mix melted butter, minced garlic, parsley, thyme, lemon juice, smoked paprika (if using), salt, and black pepper.
3. Preheat the Grill:
Heat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grates to prevent sticking.
4. Grill the Lobster Tails:
Place the lobster tails, shell side down, on the grill. Brush generously with the garlic herb butter. Cover the grill and cook for 8-10 minutes, basting occasionally, until the meat is opaque and cooked through.
5. Serve:
Transfer the grilled lobster tails to a serving plate. Drizzle with any remaining garlic herb butter and garnish with additional parsley. Serve with lemon wedges on the side.
